Most of what you call taste is happening in your nose

Your tongue only knows five things: sweet, sour, salty, bitter, and umami. Everything that makes food identifiable, that a strawberry is a strawberry and not just sweet, arrives through the back of your throat on the exhale, into the same nose you thought was only for sniffing.

Pinch your nose, put a jellybean in your mouth, and chew. You’ll get sweet, a flat, generic sweet, and almost nothing else. No cherry, no lemon, no buttered popcorn. Now let go of your nose while you’re still chewing. The flavor arrives all at once, like a light coming on. It was there the whole time. You just weren’t smelling it.

This is the strange secret of eating: most of what you experience as taste isn’t taste at all. Taste, strictly, is the small set of qualities your tongue can register on its own — sweet, sour, salty, bitter, and savory umami, plus a growing case for fat. That’s the whole vocabulary of the tongue. Everything else, that a strawberry is a strawberry and not just “sweet,” that coffee is coffee and not just “bitter,” is smell. It’s coming from the food, up the back of your throat, and into the same nose you thought was only for sniffing.

There are two ways air reaches your smell receptors, which sit high up inside the nose. The one everybody knows is orthonasal: you sniff, air comes in the nostrils, you smell the coffee before you drink it. The one nobody notices is retronasal: as you chew and swallow and then breathe out, warm air from your mouth travels up and back through the passage that connects your throat to your nasal cavity, carrying the released aromas of the food with it. Same receptors, opposite direction. The sniff is the trailer; the retronasal hit, on the exhale, is the film.

Your brain then does something sneaky with that signal. Even though the aroma is landing in your nose, your brain files the whole experience under mouth. It stamps the flavor onto the food sitting on your tongue, because that’s where the chewing and the taste and the texture are all happening at once. This is called oral referral, and it’s why it feels obvious that flavor lives in your mouth. It doesn’t. Your brain is redirecting a nose sensation to your tongue and never telling you it did.

This is also why a head cold turns dinner to cardboard. Nothing is wrong with your tongue, sweet and salty come through fine. What’s blocked is the retronasal airway, so the aroma can’t reach the receptors, and suddenly food has qualities but no identity. It’s the jellybean trick, except a virus is pinching your nose instead of your fingers. It’s why people mid-cold say food “tastes bland” when what they’ve actually lost is smell.

Once you know it’s there, you can catch your own nose in the act. Take a sip of something with real character, wine, a good juice, coffee, hold it, and breathe out gently through your nose while it’s in your mouth. That blooming second wave, the part that tells you which fruit, which roast: that’s retronasal olfaction, working the whole time behind a sense you gave all the credit to.

We say we have five senses and we say taste is one of them. But the thing we actually love about food, the difference between a peach and sugar water, is your sense of smell, coming in a door you never knew was open.
